Sticky Apricot Chicken

Pan seared chicken thighs slow simmered in apricots, balsamic vinegar and avocado oil. Served over cauliflower rice and roasted broccoli with basil and parsley.

How to Prepare

Microwave

Place meal in a microwave-safe dish and cover loosely with a microwave-safe lid or damp paper towel to keep moisture in. Heat on medium for 2–3 mins, stir, then continue in 30-second bursts until hot. Let it sit for a minute before serving.

Air Fryer

Place the chicken and broccoli in the air fryer basket and heat at 350°F (175°C) for 5–7 minutes, checking halfway to avoid over-crisping. Reheat the cauliflower rice separately in the microwave or on the stovetop.

Stovetop (for Best Flavor)

Add chicken, cauliflower rice, and broccoli to a skillet over medium-low heat. Cover and reheat gently for 6–8 mins, stirring occasionally to prevent sticking. If sauce has thickened too much, add a splash of water or broth to loosen it.
